Blue agave fields at sunset beneath a volcano in Jalisco

The tequila

Seven years of sun, in one clear pour

I

Highland agave

Blue Weber agave grown in the red soil of Los Altos, Jalisco, cut by hand after seven patient years.

II

Slow stone ovens

Piñas roast for 48 hours in brick ovens — never diffused — so the sugar caramelises instead of stripping.

III

Open-air ferment

Wild fermentation in small wooden vats, then a gentle double distillation in copper pot stills.

Tasting notes

Nose

Cooked agave, orange blossom, wet stone.

Palate

Bright citrus, green herbs, a rounded sweetness.

Finish

Warm white pepper, long and clean, no burn.

40% ABV · 750ml · Blanco · Small batch
